Cook Time: 35 minutes
Total Time: 45 minutes

Ingredients

4 boneless, centre-cut pork chops (at least 1” thick)
2 lbs carrots, peeled and cut into 3” sticks
4 tbsp brown sugar
4 tbsp butter
1 tbsp Worcestershire sauce
1 tbsp low-sodium soy sauce
1 tsp Dijon mustard
1 tsp salt
½ tsp smoked paprika

Instructions

  1. Preheat oven to 350 F.

  2. Pat pork chops dry with paper towel and arrange in a large baking dish in a single layer.

  3. Nestle carrots around the chops, then top each chop with a tablespoon of brown sugar, followed by a tablespoon of butter.

  4. Whisk together Worcestershire, soy sauce, Dijon, salt and smoked paprika in a small bowl. Drizzle the mixture over the whole dish.

  5. Place in the oven and bake until pork chops are 145 F in the centre, about 30-40 minutes. Use tongs to gently toss carrots in the sauce halfway through cooking time. Remove from the oven, cover with foil and allow to rest for 5 minutes before serving with a drizzle of pan juices. Enjoy!
