Recipe: Creamy Lemon-Dill Salmon

Creamy Lemon-Dill Salmon

Serves: 4

Ingredients

2 tbsp flour
½ tsp garlic powder
½ tsp salt
¼ tsp black pepper
4 boneless, skinless salmon fillets 
2 tbsp butter, divided
½ cup heavy cream
½ cup vegetable broth
Juice and zest of a lemon
2 tbsp chopped fresh dill

Instructions

  1. Combine flour and spices in a small bowl. Pat salmon dry with paper towels and place on a plate, then sprinkle with flour on both sides.

  2. Preheat a large skillet over medium-high heat. Once the pan is hot add 1 tbsp butter and swirl to coat the bottom. Add the salmon to the pan and cook until golden, 3-4 minutes per side. Remove from skillet to a plate.

  3. Add remaining butter to the skillet. Add cream, and broth then stir to combine and continue to cook over medium-high heat for another 3-4 minutes until mixture comes to a simmer. 

  4. Add lemon juice, zest and dill. Stir to combine. Return salmon to the skillet and spoon sauce over top. Cook for another 4-5 minutes, until salmon is cooked through and sauce has thickened. Enjoy!
