Recipe: Ham + Asparagus Bundles

Ham Steak + Eggs with Spring Pea Salad

Ingredients

2 small bunches asparagus
2 - 10”x10” puff pastry sheets
150g Boursin garlic and herb cheese
175g ham, thinly sliced
1 egg
Black pepper, to taste

Instructions

  1. Preheat oven to 375 F. Line a large baking sheet with parchment paper.

  2. Trim asparagus into 3” pieces

  3. Roll out puff pastry onto a flat surface and then slice into 4 equal strips. Slice in half crosswise to make 8 strips. Repeat with the other sheet of puff pastry.

  4. Starting with one strip, lay a slice of ham in the centre, then dollop ½ tbsp Boursin in the middle of the ham. Lay 3-4 asparagus perpendicular to the pastry strip, and then roll tightly to close. Place on the baking sheet.

  5. Repeat with remaining strips. 

  6. Whisk the egg in a small bowl. Brush the egg lightly over the puff pastry and season with pepper.

  7. Bake for 25 minutes, or until the pastry is golden.
