Recipe: Slow Cooker Turkey Pumpkin Chili with White Beans
Slow Cooker White Bean Turkey Pumpkin Chili
Serves: 4
Prep Time: 10 minutes
Cook Time: 4 hours
Ingredients
3 cups cooked turkey meat, roughly chopped
2 garlic cloves, minced
1 yellow onion, diced
1 jalapeno, ribs and seeds removed and diced
½ tbsp chili powder
½ tbsp cumin
1 tsp oregano
2 cups cooked Great Northern beans
2 cups pumpkin puree
1 cup frozen corn
1 113 ml can chopped green chilies
2 cups low-sodium chicken or vegetable broth
Salt and pepper, to taste
For serving: sour cream, green onion, cilantro or sliced avocado
Instructions
Place all ingredients (except for garnishes) in the slow cooker insert. Stir to combine.
Cover and cook on high for 4 hours or low for 6 hours.
Taste and adjust seasonings, if necessary. Add your favourite toppings and enjoy!
