Creamy Split Pea, Bacon + Turkey Chowder

Ingredients

6 slices thick-cut bacon or pancetta
1 small yellow onion, diced
1 red bell pepper, diced
1 cup celery, diced
2 tbsp flour
1/2 tsp smoked paprika
1/4 tsp ground mustard
1 cup dry green split peas, rinsed well
4 cups low-sodium vegetable broth
1-2 cups water
2 cups milk
2 cups cooked turkey or chicken meat, diced or shredded
1 cup frozen corn
Salt and pepper, to taste

Instructions

  1. Preheat a large pot over medium heat. Add bacon and cook, stirring occasionally, until crispy, about 5 minutes. Using a slotted spoon, remove half the bacon to a paper towel lined plate and set aside.

  2. Add onion, bell pepper, and celery to the pot. Continue to cook, stirring often, until veggies have softened, 3-4 minutes.

  3. Sprinkle veggies with flour, smoked paprika, and ground mustard. Stir to combine, then add split peas and broth. Bring to a low boil, then cover and lower heat. Gently simmer until split peas are tender, 45-55 minutes. (Check halfway through cooking time, and if liquid is too low, add 1-2 cups of water to the pot).

  4. Once the split peas are softened, add milk, turkey, and corn to the pot, then stir to combine. Bring the soup back to a simmer, then taste and add salt and pepper, if desired.

  5. Top with reserved bacon and serve immediately. Enjoy!
