Serves: 4
Prep Time: 5 minutes
Cook Time: 25 minutes
Total Time: 30 minutes
Ingredients
1 lb Italian pork sausage
2 tsp olive oil
½ yellow onion, diced
3 cloves garlic, minced
2 tsp fresh thyme leaves
Salt and pepper, to taste
2 cups chicken or vegetable broth
2 cups cooked Great Northern Beans or 1 can (19oz/540 ml) white beans, drained & rinsed
2 tbsp sour cream
Zest of a lemon
¼ cup breadcrumbs, divided
¼ cup finely grated Parmesan, plus more for serving
2 cups broccoli florets
Instructions
Preheat a large ovenproof skillet over medium-high heat. Add sausage to the pan, and sear on all sides, until golden, 5-6 minutes. Remove to a plate and set aside.
Lower the heat to medium and add olive oil to the pan, then swirl to coat the bottom. Add onion, garlic, and thyme. Season with salt and pepper, then cook, stirring occasionally, until onions are softened, 3-4 minutes.
Add broth and beans. Scrape the browned bits from the bottom of the pan and then bring to a simmer.
Add sour cream, lemon zest, half the breadcrumbs, and Parmesan. Stir until everything is well combined, then add the broccoli and stir to coat. Spread in an even layer and then nestle the sausages among the broccoli and beans. Cover and cook for another 5 minutes, until sausages are cooked through and broccoli is tender.
To serve, sprinkle with remaining breadcrumbs and top with more Parmesan, if desired. Enjoy!
